OUR IDENTITY

Lluerna was created in 2001 by Mar Gómez and Víctor Quintillà for the sake of good food. It is the result of pairing food and wine, sea and land, local cuisine and creative gastronomy.

Our approach is not brash. It is intimate and transparent and aspires to achieve the simplicity observed in nature. Without any fanfare, with the slow hum of a whisper so close it moves us, Lluerna’s cooking seeks to reveal what has always been right in front of our eyes, but which we were unable to perceive.

Our tools on this journey are cooking, love and creativity and, of course, your company, because there is no journey without good friends.

THE INGREDIENTS WE COOK WITH

Lluerna is committed to radically Catalan cuisine, based on tradition and the use of local, nearby and everyday ingredients, prioritising those that are in season and organic.

At the same time, we seek to make its very everydayness, something surprising for those who take this journey with us. The basic ingredients are precision, passion and sensitivity. In short, to restore the concept that cooks are craftspeople and to recapture dishes with soul.

Ingredients are cooked with the fires of sustainability and accessibility.

Approachability reminds us of our origins and leads us to an experience that combines tradition and modernity, affection and professionalism. Victor chooses the best organic and seasonal products from his network of producers. The best flavour always requires the best, locally-grown organic ingredients that receive the necessary attention, enhancing the value of the land, the produce and the farmers.

360° SUSTAINABILITY

To us sustainability is a continuous process of improvement to develop ourselves now as we look toward the future and focus on social responsibility. We want to be fully sustainable. If necessary, flipping everything we have been taught upside down to rebuild a reality consistent with who we want to be.

We run research, development and innovation workshops that have contributed to increasing the sustainability of internal and external processes, spaces, production — a different way of relating to ourselves and others.

The restaurant manages its water responsibly with a water-efficient dishwasher and manages its waste in a sustainable manner through reduction, reuse and proper sorting techniques.

We aspire to generate social awareness by sharing our experience with others, telling a sustainable story in the dining room.

We have more than 400 types of national and international wines in our wine cellar where Mar showcases unique producers who make wines that reflect their region and personality. Wines that have soul.
